Aaubergine, potatoes and tofu baked in tomato-coconut sauce

you'll need
1 aubergine
5-6 medium size potatoes
1 smoked tofu
tomato pure
coconut milk
salt, lime, spring onion and garlic

Steps:
First cut the aubergine in 2-3cm pieces, salt them and let them soak the water out for about half an hour. Cut the potatoes and fry them on a pan; also cut the tofu and leave it for a while. Once the water is soaked out, grill the aubergine for 2 minutes on a pan as well.

In order to make the sauce, I used homemade tomato pure, spring onion, garlic and cooked it for 3 minutes, then added coconut milk, salt and lime. Stir it 'till it's done :)

Now use a baking try and place the ingredient in several lawyers; start with potatoes, then aubergine, tofu and cover in a sauce. You should be able to make 8-9 lawyer altogether. Spread some seasoning such as basil or oregano on the top and bake it on 180 for about an hour.

This recipe is little bit time-demanding and the whole preparation may takes 1,5 hour but it's definitely worth it. It's dairy free, gluten free, vegan and vegetarian.

Wholegrain tortillas with beans, avocado, red onion and red pepper



You'll need
2 wholegrain tortillas (i bought mine at Tesco)
1/2 can of beans
salad, you can use rocket, iceberg, spinach etc
red pepper and onion
corn

to make the guacamole use
1 avocado, lime, salt, spring onion and garlic (if you do not mind the smell of it ) LOL
blend it together to create the mass which will be spread over tortilla

Wholegrain tortillas with cottage cheese and vegetable

2 wholegrain tortillas
1 cottage cheese
rocket
raddish
broccoli
(in order to avoid histamine intake, do not use tomatoes, spinach, avocado, olives, eggplant and pumpkin)

Heat up tortillas in frying pan or in microwave oven, spread cottage cheese first, add rocket and other ingredients and wrap it up
Time: 5 minute

Pizza made of cauliflower

yet another wonderful recipe which is gluten-free and possibly dairy

you'll need the following ingredients:

1 head of cauliflower
2-3 eggs
toppings for pizza (I used tomato sauce, cheese, ham and corn)
oregano seasoning on the top

directions:
clean the cauliflower and mix it food processor, put it in the bowl and heat it up in microwave oven for about 4 minutes. Once it's soft, take it out and let it cool off. Soak the water out of it, add the eggs to thicken it up. Form a pizza crust and place it on the baking tray with baking paper.

Preheat the oven and bake the crust for about 15 minutes, then remove it and add the toppings.
For the dairy readers, options is not to add the cheese or replace it with something else. Cover it with oregano seasoning for a better flavor.

Once the pizza is decorated, place is again in the oven and bake it for 40-45 minutes.
Serve with glass of wine, Bon Apetit!

PS: I promise you won't recognize or taste the cauliflower, it makes you think you're eating a regular pizza crust. 

Cooking time (including preparation): under 1 hour.



Buckwheat spell pancakes filled with cheese and spinach and topped with tomato sauce

1.blend spell flour, buckwheat oats, egg and olive oil, use the dough to make small pancakes
2. once you're done, fill them with spinach and cheese and roll them up
3. preheat the oven, place them in container and top with homemade tomato sauce
4. after 10 minutes, add shredded cheese until it melts
5. serve with fresh spinach
